After filleting a local coronation trout Taylor from Adreno runs you through how to skin a fish fillet.
Get a nice clean sharp knife and nice clean surface. Put a hole in the fish fillet you can grip the fillet with your finger. Once you have a good grip on the fish fillet start at the top of the fillet cutting down to the skin. Remove the skin and then feel down the fillet checking for any bones that are leftover.
