    Fish Laksa

    When it comes to fish recipes, Laksa is always a crowd-pleaser! If you like coconut milk curries, asian noodle dishes, or a bit of spice, then you'll love this favourite. This fish recipe goes well with most fish, but also prawns and crayfish.

    Ingredients

    • Rice noodles
    • 1 Cup green beans
    • 500g Fish (diced into cubes)
    • 200mls Coconut cream
    • 1 Chilli
    • 2 tbsp Laksa Paste
    • 1 Cup bean sprouts
    • 1.5L Fish Stock
    • 1 Brown Onion
    • 1 Bunch coriander
    • Kaffir lime leaves
    • Olive oil

    Method

    Fish Laksa
    1. Put rice noodles in bowl and cover with boiling water and allow to sit for 5 minutes, strain and set aside
    2. Add small amount of olive oil to the wok
    3. Add onions and laksa paste to wok and sauté until aromatic
    4. Add coconut cream and fish stock then bring to boil
    5. Add beans and kaffir lime leaves and simmer for 5 minutes
    6. Add diced fish and simmer for 2-3 minutes until fish is just cooked through
    7. Add bean sprouts and strained rice noodles
    8. Portion out into serving bowls and garnish with chilli, coriander and lime
